JUICY EGGPLANT PIZZA STEAKS
Ingredients: 2 medium eggplants 1 tablespoon Italian or Tuscan seasonings 2 tablespoons olive oil 1/2 cup tomato sauce of your choice 10 cherry tomatoes, sliced in halves 1/2 cup vegan cheese fresh parsley, for garnishing Method: Preheat oven to 180C and line a baking tray with parchment paper. Slice each eggplant in a half lengthwise and cut through the flesh into a diamond cross-hatch pattern going about an inch deep. Arrange eggplant halves on the prepared baking tray, drizzle with oil and sprinkle with seasonings. Pop in the oven for 20 minutes. Take out from the oven, do not switch the heat off. Make a dent in each eggplant steak using a fork. Top with tomato sauce, cherry tomatoes and cheese. Pop back in the oven for another 10 minutes or until the cheese has melted and the tops are golden brown. Serve warm, garnished with fresh parsley. Enjoy

SUPER HEALTHY WALNUT CAKE❤️ That cake we all love!
❇️Ingredients: 3 eggs 1 cup of xylitol 2 tablespoons butter or coconut oil 2 tablespoons of natural yogurt 1 cup almond flour 1/2 cup oat bran 50g chopped walnuts 1 tablespoon powdered yeast ❇️Preparation Method: Beat the whites in snow and book. Then put the yolks in the mixer and add, the xylitol and the butter, beat until it becomes a cream. Add the yogurt, flours and beat just to mix. Turn off the mixer and mix the chopped nuts, whites and yeast. Grease a small mold (I used it 10cm high and 15cm in diameter) you can also use an English cake, or a round cake of approx. 20 cm that also works (just to avoid a cake that is too low). Take to preheated oven at 180° until golden. ❇️Coverage: 1 pot of light cream cheese 100g chopped walnuts 1 teaspoon vanilla 1/2 cup of xylitol 2 tbsp coconut milk powder or zero lactose (optional) Beat everything in the mixer leaving the nuts last.

Rice flour pancakes
This is one of the recipes I prefer: Ingredients -Rice Flour (Brown or White) -Plant-based Milk -Bananas -Blueberries -Chocolate Chips -any topping Now add the rice flour, plant-based milk and bananas into a blender and blend for around 30-40 seconds or until completely smooth. put the pancake batter into a mixing bowl and fold the ingredients in (such as blueberries or chocolate chips). Heat a non-stick pan on medium-high heat and add a generous amount of vegetable oil or vegan butter. Once heated, scoop out around 1/2 cup of the pancake batter for each pancake. Cook on each side for around 3-4 minutes or until golden. Serve with maple syrup, fruit and any other toppings of choice.
